We are building the menu around the fundamentals: properly smoked meat, disciplined execution, satisfying portions, and sides that earn their space on the tray. Final items and prices will be released before opening.

No imitation Texas roadhouse. The design draws from Happy Holler, North Central, and Knoxville's own scruffy identity.

Scruffy Pig is being created for 937 N. Central Street—not dropped into a generic storefront. The building, outdoor space, bar, and Happy Holler setting are part of the experience.
Archer Bagley brings years of barbecue and restaurant operating experience as the former owner of Archer's BBQ. Daniel Schuh brings architecture, development, preservation, and event-hospitality experience as owner of Happy Holler Events.
Together, they are building a restaurant that treats food, place, and operations as one system.

From office lunches and family gatherings to weddings and full venue events, Scruffy Pig is being designed to support straightforward pickup, delivery, and event service.
