Archer is the former owner of Archer's BBQ. His role in Scruffy Pig is grounded in restaurant operations, barbecue production, catering, staffing, customer flow, and the practical realities behind a busy service.

The objective is not nostalgia. It is to apply the experience—what worked, what did not, and what must be better—to a focused new restaurant.

Built for the building and neighborhood.

Daniel is an architect, developer, preservationist, and owner of Happy Holler Events. His role connects the restaurant to the property, the neighborhood, and a larger hospitality and event ecosystem.

That means the physical setting is not background decoration. It is part of the concept.

Why Scruffy Pig

Knoxville barbecue without the costume.

The name connects naturally to Knoxville's scruffy identity while keeping the category unmistakable. The brand can be bold and memorable without copying Texas, pretending to be a century-old smokehouse, or turning the pig into a childish mascot.
